The first candle is lit on the evening of December 4. Hanukkah lasts eight nights, so it is a nice excuse to stretch the celebration across dinners, gatherings, games, music, latkes, doughnuts, candle lighting, and a few tiny adventures.
As with many Jewish holidays, Hanukkah begins in the evening before the first full calendar day.

Do you call them latkes or potato pancakes?
It does not matter what you call them, as long as you make them and enjoy them. They are delicious, crispy, comforting, and exactly the kind of food that makes people hover near the kitchen pretending they are “just checking.”
I make pretty good ones, but I do not use an exact recipe. I tend to throw things in a bowl and see what happens. But can you really go wrong with crispy potatoes and onions? Here’s my take on latkes.
- Grab a big bowl. You’ll want to make a lot.
- Peel about 5 to 6 potatoes and shred them with a grater or food processor grater attachment.
- Use paper towels and squeeze out as much water as possible. This matters. Watery potatoes are the enemy of crispy joy.
- Chop an onion to your taste. I like bigger pieces, but my nephews would vote onions out of the family entirely if allowed.
- Add 2 to 3 eggs and about 1/8 cup of all-purpose flour. Yes, that is not much flour. Stay with me.
- Add salt and pepper. Be generous with the pepper because it gives them a little background kick.
- Add 1 teaspoon of baking powder. Why? I am not entirely sure. My mom did it, so I do it.
- Mix, then add the secret ingredient: oatmeal. I do not measure, but it is probably about 1/4 to 1/2 cup depending on how many potatoes you use. Oatmeal helps make these potato pancakes crispy and delicious.
- Heat about an inch of canola or vegetable oil in a large, somewhat deep pan until it is bubbling.
- Use an ice cream scoop to add batter to the pan, leaving room between each scoop so you can flatten it into a pancake shape.
- When the bottom is brown, flip the pancake and cook until the other side is browned.
- Drain on a plate or tray lined with paper towels.
- I butter them and serve with sour cream and applesauce.
Yum. That is the official measurement.
